Microwave Chocolate Banana Cake 🍌🍫
Ingredients:
1 cup all-purpose flour
1 tablespoon baking powder
2 tablespoons cocoa powder
3/4 cup sugar
1 ripe banana, mashed
2 eggs
4 tablespoons oil
1/3 cup milk (adjust to make a smooth batter)
Instructions:
Mash the banana until smooth.
Add eggs, sugar, oil, and milk to the mashed banana and mix well.
In another bowl, sift together flour, baking powder, and cocoa powder.
Fold the dry ingredients into the wet mixture until smooth.( You can mix everything all together as well), Batter should be pourable.
Pour into a microwave-safe dish.
Microwave on high for 8 minutes. Check with a toothpick; it should come out clean.
Let it cool slightly before slicing. Enjoy!
Oven-Baked Vanilla Cake (1 Cup Flour )🍰
Ingredients:
1 cup all-purpose flour
1 ½ teaspoons baking powder
3/4 cup sugar
1/2 cup oil (or melted butter)
1/2 cup milk
2 eggs
1 teaspoon vanilla extract
A pinch of salt
Instructions:
Preheat your oven to 180°C / 350°F. Grease a small baking pan or line it with parchment paper.
In a bowl, mix flour, baking powder, sugar, and salt.
In another bowl, whisk together egg, milk, oil, and vanilla extract.
Gradually fold the dry ingredients into the wet mixture, mixing gently until smooth. Don’t overmix.
Pour the batter into the prepared pan.
Bake for 25 minutes, or until a toothpick inserted in the center comes out clean.
Let it cool for 5–10 minutes before slicing. Serve plain, with frosting, or dusted with powdered sugar.
Chatpata Baingan (Tangy & Spicy Eggplant) 🍆
Ingredients:
For the Baingan:
2–3 medium eggplants (baingan), cut into desired pieces
1 teaspoon coriander powder
1 teaspoon cumin powder
1/2 teaspoon garlic powder
1/2 teaspoon ginger powder
1/2 teaspoon red chili powder (adjust to taste)
Salt to taste
1/2 teaspoon chaat masala
For the Gravy / Masala:
2 medium onion, finely chopped
1 cup tablespoons tomato paste
4 , 5 green chilies, finely chopped
1/2 tbs coriander powder
1/2 tbs cumin powder
1/2 tbs red chili powder (adjust to taste)
1/2 tbs turmeric powder
Salt to taste
2 tablespoons imli (tamarind) pulp
4 to 5 tablespoons oil
Instructions:
Marinate the Baingan:
In a bowl, mix the baingan with coriander powder, cumin powder, garlic powder, ginger powder, red chili powder, salt, and chaat masala. Set aside for 10–15 minutes.
Prepare the Gravy:
Heat oil in a pan. Sauté onions and green chilies until the onions turn golden.
Add tomato paste and cook for 2–3 minutes.
Add the dry spices: coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Mix well.
Add imli pulp and let it simmer for a minute.
Cook the Baingan:
Add the marinated baingan to the gravy. Mix gently so the masala coats the pieces.
Cover and cook on medium-low heat, stirring occasionally, until the baingan is soft and fully cooked (about 10–15 minutes depending on the size of pieces).
Finish & Serve:
Squeese lemon on top for extra tang, if you like.
Serve hot with roti, paratha, or rice , add salad raita on side.
