ENCHILADA BAKE
1 1/2 cups shredded cheese
1 packet of taco seasoning
1lb ground meat (I used beef. You could also do it meatless and use beans.)
12 corn tortillas
¼ cup oil for frying tortillas I use vegetable oil
1 can enchilada sauce
1 can Rotel or diced tomatoes
Instructions:
Cook the meat with ½ of the packet of taco seasoning. Drain grease. Add the Rotel and remaining taco seasoning. Continue cooking until all the water from the can of tomatoes has cooked off.
Fry tortillas one at a time in a shallow skillet for 30 seconds per side. Drain on paper towels.
In a greased 9x13 pan lay down 4 of the tortillas.
Top with half of the meat mixture, 1/3 of cheese, and 1/3 of the enchilada sauce.
Repeat starting with 4 more tortillas.
Finish off with the last 4 tortillas on top, the last third of the cheese, and enchilada sauce.
Bake in a 350-degree oven for 25 min.
Top with shredded lettuce, salsa, sour cream, or avocado.
