Creamy Chicken & Veggie Soup
3-4 cups cooked, chopped chicken
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrot (Or red pepper!)
3 cups sliced mushrooms
2 tbsp butter
Auntie Nonos Everything Seasoning
1/2 tbsp italian seasoning
1/4 cup flour
4 cups chicken broth (made with better than boullion paste)
3/4 cups-1/5 cups half and half
*Optional - 1/4 cup cornstarch + water
In large pot, sautee veggies in butter for 10 minutes. Whisk in flour and continue whisking while adding broth. Add seasonings and chicken. Simmer another 15 minutes. Add half and half and cornstarch slurry if you would like your soup to be a little thicker. Serve warm with beer bread!


Beer Bread
3 cups sifted flour
1 12 oz light beer
1/4 cup sugar
1 tsp salt
3 tsp baking powder
1/4 cup melted butter
Preheat oven to 375 degrees. Mix together dry ingredients. Pour in beer and melted butter. Pour into greased bread pan. Bake for 45 minutes-1 hour.


Beef Stroganoff
1 bag egg noodles
1 pound ground beef
1/2 cup chopped onion
3/4 tsp salt (OR 1 tsp Auntie Nonos Everything seasoning)
1/4 tsp paprika
Pepper to taste
3-4 splashed Worcestershire
1 can cream of mushroom
1 cup sour cream
1 bag egg noodles
Cook entire bag of egg noodles according to package directions. Sautee onion in avocado oil until slightly browned. Add ground beef and continue cooking until no longer pink. Drain fat. Add remaining ingredients. Simmer slightly for 5 minuites. Add cooked egg noodles. Serve hot!
