A hearty stew is a perfect way to make sure your family is getting good healthy nutrients without even noticing. From the chunky cut beef, warm soft potatoes melting in your mouth, then washing it down with a delicious light broth… Mmmm! This stew/ Guisado is guaranteed to have your family swooning; especially the teenagers. You know the growing kids are hungry. Now wait for just a second! This recipe gets better. How? 🛑 This recipe will require about 50 minutes to 1 hour of your time. Chopping vegetables take time to which you can pre-chop your vegetables a few days before to make for an easy weekday meal. Cover the vegetables with water and keep them in the fridge till needed. Cook time will be 30-35 minutes. Add 8 to 10 minutes as coming to a boil takes time. This is an excellent recipe if you know how to multitask and if you don’t. Take your time, this recipe is worth it.

Ingredients
2 Pound New York Beef Loin (or Chuck roast / Diezmillo)
1 1/2 tsp ground cumin (more flavor use 1/2 Tbsp)
1 1/2 Black pepper (more spicy flavor use 1/2 Tbsp)
1/2 Tbsp sea salt ( adjust to taste after pot comes to boil)
2 garlic cloves, minced
1 Tbsp of olive oil
1 Tbsp AP flour
1/2 medium onion, chopped
1 large tomato, chopped
1/2 cup of corn (more if you love it)
10- 15 green beans, chopped
1 Anaheim pepper
1 to 2 large carrots, half mooned
1 large zucchini, chopped into cubes
1/4 cabbage, chopped
2 to 3 cups of beef bone broth
2 to 3 russet potatoes, cubed
1/2 Tbsp Mexican oregano ( 1 Tbsp if you love it as much as I do)
mall bunch of cilantro (optional)
Serve with Mexican rice and smooth beans
TIP‼️
Bone Broth replacement: use the desired amount of warm water and combine it with beef or chicken bouillon
Example: 2 cups warm water with 2 Tbsp bouillon
Beef bone broth- If you are in a humid climate start with 2 cups of broth: In arid zones use 3 cups- High altitude it depends on the say for us, start with 2 1/2 cups and adjust as needed after you cook the sew for 20 mins after boiling
BEEF!! If you taste your beef before its fully cooked, you'll get a gamey flavor. Be patient and taste at the 30-minute mark. Then decide if you need some more cooking time.
