Let's cook dinner! I was in need of some new kosher dinner ideas for the week so I tried some new recipes and pulled out an old recipe from my childhood to share as well since I hadn't made that in a while. Because we are gluten free in our home, the dinners are all gluten free dinners as well. And because we are an Orthodox Jewish family, our dinner is kosher as well.

Note: I omitted the oyster sauce since that’s not kosher. I served this on top of rice.
Sushi Bake
Season salmon with garlic powder, salt and pepper. Bake at 400 for 15 minutes. Shred salmon in a big bowl. (adding a package of chopped imitation crab would surely be delicious too at this point, I just didn't have any). Add about 1/2 cup of cream cheese & 1/4 cup Mayo. Mix. For the rice: rinse well, drain, add water equal to amount of rice, bring to a boil, lower heat to simmer and add lid, cook for 20 minutes. Let cool. Mix 3 tbsp rice vinegar and sugar, add to cooled rice and mix well. Put rice in a baking dish. Add a layer of furikake or crumbled seaweed sheet. Add salmon mixture. Bake at 350 for ten minutes. Add sirache, spicy Mayo, fresh chives, and black sesame. Serve with seaweed sheets.

Meatball Vegetable Soup
Prepare meatballs by mixing ground beef, egg, breadcrumbs; shaping meatballs, boil for 30 minutes, drain water. In a soup pot, add one chopped onion, chopped celery, chopped carrots, chopped parsnip with a little bit of oil. Heat for a few minutes. Add a can of tomato paste and a can of tomato sauce. Add 8 cups or so of water. Add spices: turmeric, paprika, oregano, and salt. Mix. Simmer 15 minutes. Add meatballs, can of green beans, can of corn, 2 cans sliced potatoes. Simmer about an hour. Ten minutes before serving, add pasta of your choice.
