Handi Chicken with Vegetables

Ingredients:

800g chicken breast, cut into bite-sized pieces

2 large carrots, julienned

1/2 head of cabbage, shredded

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

2 large onions, finely sliced

2 tomatoes, pureed

1 cup yogurt, whisked

2 tablespoons ginger-garlic paste

3 tablespoons vegetable oil or ghee

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon cumin powder

1 teaspoon garam masala

1 teaspoon red chili powder (adjust to taste)

1/2 teaspoon turmeric powder

Salt to taste

Fresh coriander leaves for garnish

1/2 cup water or chicken broth

Instructions:

Prepare the Handi:

Heat the oil or ghee in a handi or a deep, heavy-bottomed pot over medium heat.

Add the cumin seeds and let them sizzle for a few seconds until aromatic.

Cook the Onions:

Add the finely sliced onions to the handi and sauté until they turn golden brown.

Add the Ginger-Garlic Paste:

Add the ginger-garlic paste and sauté for another 2-3 minutes until the raw smell disappears.

Cook the Chicken:

Add the chicken pieces to the handi and cook until they are browned on all sides.

Add the Tomatoes and Spices:

Add the pureed tomatoes to the handi and cook until the oil starts to separate from the masala.

Add the coriander powder, cumin powder, red chili powder, turmeric powder, and salt. Mix well and cook for a few minutes.

Add the Vegetables:

Add the julienned carrots, shredded cabbage, and sliced bell peppers to the handi. Mix well to combine.

Cook with Yogurt:

Lower the heat and add the whisked yogurt to the handi. Stir continuously to avoid curdling.

Add 1/2 cup of water or chicken broth and mix well.

Simmer:

Cover the handi with a lid and let it simmer on low heat for about 20-25 minutes, or until the chicken is fully cooked and the vegetables are tender.

Finish and Garnish:

Once the chicken and vegetables are cooked, add the garam masala and mix well.

Garnish with fresh coriander leaves.

Serve:

Serve the Handi Chicken with Vegetables hot with naan, roti, or steamed rice.
