VEGAN BIRTHDAY CAKE RECIPE: Cake • 2 cups All Purpose Flour • 1 teaspoon baking powder • 3/4 teaspoon table salt • 1/2 teaspoon baking soda • 3/4 cup water • 3/4 cup granulated sugar • 1/2 cup coconut oil • 1/4 cup lemon juice • Zest of 1 lemon • 1/2 teaspoon King Arthur Pure Vanilla Extract
Frosting - 3 tablespoons vegan butter, room temp • 2 cups Powdered sugar • Lemon zest • 1/2 teaspoon Pure Vanilla Extract • 2 to 3 tablespoons water • 1/8 teaspoon table salt
Mix dry ingredients in a separate bowl Mix wet ingredients in a separate bowl until sugar is smooth or dissolves Add wet ingredients to dry & bake at 350F for 30-35 minutes Make frosting while baking. Wait til cake completely cools until frosting. Garnish however!
