🍋 INGREDIENTS (Serves 4)
• 2 lbs chicken thighs (bone-in, skin-on)
• 1.5 lbs baby Yukon gold potatoes, halved
• Juice of 1 lemon
• Juice of 1 orange
• 1 tbsp German-style mustard (not Dijon)
• Salt & black pepper, to taste
• Greek oregano
• Olive oil, for drizzling



🔥 INSTRUCTIONS
1. Preheat oven to 400°F (200°C).
2. Place chicken thighs and halved potatoes in a large baking dish.
3. In a bowl, whisk together lemon juice, orange juice, mustard, salt, pepper, oregano, and a generous drizzle of olive oil.
4. Pour the sauce evenly over the chicken and potatoes.
5. Cover with foil and bake for 1 hour.
6. Uncover and bake for another 30 minutes, or until golden and crispy around the edges.
7. Serve hot — with the pan juices spooned over the top.
