Today we are cooking at home on a budget. These dinner recipes are the best food I've made in a while. These dinner ideas are from TikTok Chef Tom Bateman. I make a hot honey sandwich and a delicious sweet potato and chickpea curry. We're using all the spices but staying low on main ingredients to keep the costs down.

Chicken Sandwich:
Wet Dredge;
100 ML buttermilk
2 tbs pickle juice
1tbs hot sauce
1tsp salt
1tsp white pepper
1tsp garlic powder
1tsp onion powder
1tsp cayenne
2tsp smoked paprika
1tsp chicken powder

Flour:
50g flour
50g cornflour
1tbs hot sauce
1tsp salt
1tsp white pepper
1tsp garlic powder
1tsp onion powder
1tsp cayenne
2tsp smoked paprika
1tsp chicken powder

10g butter
2tbs mayo
1 clove of grated garlic
Squeeze of lemon
Handful parsley

Hot honey
2tbsp honey
2 tbsp hot sauce

Debone bone in skin on chicken thighs.
Dredge in we then dry. Cook in hot oil for 3/4 mins each side.
Serve on a toasted bun with lettuce, and two sauces.

Chickpea Sweet Potato Curry:
1 large sweet potato peeled and diced
1 red onion diced
1 red spicy pepper small diced
4 cloves of garlic minced
1/4 cup chopped cilantro
1tbsp tomato paste
1tsp chili powder
1tsp dried ginger
1tsp tumbril
1tsp cumin
2 tsp garam masala
1/2 tsp cinnamon
1 can of coconut milk
1 can of drained and rinsed garbanzo beans

Cook red onions over medium high heat until soft in about 1tbs of your favorite oil. Add in garlic and pepper for 1-2 minutes until fragrant. Mix in tomato paste and all of your spices. Add in coconut milk and sweet potato. Bring to a boil and lower heat to medium low. Simmer until potatoes are soft (8-9 minutes) add in garbanzos and cilantro and cook for a few more minutes until warm. Serve over your favorite rice and garnish with cilantro.
