Healthy and Easy Chicken and Broccoli 🍗🥦
A quick and easy version of chicken and broccoli take out that is relatively healthier and comes together in less than 30 minutes! Perfect for a weeknight dinner or meal prep. Enjoy!
Ingredients:
-1 lb chicken breast, cut into 1” cubes
-1 head of broccoli, cut into medium florets
-freshly chopped green onion, whites and tops separated
-1/4 cup low sodium soy sauce
-1 tbs sesame oil
-1 tbs honey
-1 tsp salt
-1 tsp white pepper
-1/2 tsp red chili flakes
-olive oil for cooking
-cornstarch slurry (1 tbs cornstarch mixed with 2 tbs water)
-sesame seeds for garnish
Instructions:
-cut the broccoli and set aside
-cut the chicken breast and season with salt and white pepper
-heat wok on high heat and add 2 tbs olive oil
-add in chicken and sear 2-3 min per side until golden brown
-remove chicken from wok and set aside; add more oil to the wok
-sauté the broccoli for 2 minutes until tender and add the chicken back into the wok
-add red chili flakes, the whites of the green onion, sesame oil, soy sauce, and honey; mix well and bring to a simmer
-make a small well at the center and pour in the cornstarch slurry
-mix well until sauce thickens and turn off the heat
-garnish with green onion and sesame seeds
-serve with white rice, noodles, or any other sides
-enjoy!
