Recipes:
Sausage & Veggie Orzo Pasta:
1 lb sausage
1 purple onion, finely diced
1 red bell pepper
2 zucchini, cut in half and sliced
seasonings to taste: salt, pepper, paprika, garlic powder, lemon juice
olive oil
1/2 box orzo pasta

Add some olive oil to a large skillet. Cook for a couple minutes and then add in 1 pound of sausage and cook through. Remove sausage to plate. Use that same pan to add another drizzle of olive oil. Add peppers and zucchini. Season with salt and pepper. Cook 1/2 box of orzo pasta. Reserve some pasta water and drain the rest of the pasta. Add to skillet with veggies and pasta. Season liberally with salt, pepper, garlic powder, paprika, lemon juice and a splash of pasta water.

Roasted Potatoes:
1 Sweet Potato
2 regular potatoes
Dice up all potatoes into 1/2 inch cubes. Add to bowl and drizzle with olive oil. Season with salt, pepper, chili powder, paprika, and garlic powder. Roast in 400 degree oven for about 35- 40 minutes. Cooking time will vary depending on size of potatoes.

Roasted Salmon:
Drizzle olive oil on top of salmon. Season with paprika, garlic powder, salt and pepper. Bake in 400 degree oven for 30 minutes until cooked through. If salmon is not frozen, then the cooking time will be less so adjust accordingly.

Chicken Noodle Soup:
2 chicken breasts, cooked (recipe above for how I cook in the instant pot
1 onion, chopped
3-4 carrots
9-10 cup chicken broth
1/2 bag wide egg noodles
garlic powder, salt, pepper, oregano
Into a skillet, add a drizzle of olive oil and start cooking onions and carrots-cook for about 6 minutes until starting to soften. Deglaze the bottom of the pan with a little chicken broth and then add the full amount of broth- bring to a boil. Once boiling, add chicken and noodles. Season as desired with salt, pepper, oregano and garlic powder.

Veggie Rigatoni:
1 large onion
2 zucchini
1-2 peppers
1 lb ground beef
large jar of Raos marinara
Rigatoni
Add ground beef into skillet. Cook onions and pepper until almost soft. Add zucchini and continue to cook until vegetables reach desired softness. Add raos marinara and a box of cooked rigatoni and mix together. Season as desired with extra seasonings if you want.
