Made a simple and delicious ginger chicken. This is good for a cold and rainy day 😋🥰
📍INGREDIENTS
*1 whole chicken (3 lbs - young brown pullet) - cleaned & cut into pieces
*7 small cloves garlic - minced
*1 piece (120g) ginger - julienne
*2 tbsp vegetable oil (cooking oil)
*2 tbsp Shaohsing Rice Cooking wine
*2 tbsp dark soy sauce
*2 tbsp light soy sauce
*1 tbsp oyster sauce
*5-6 small pieces (18g) rock sugar
*½ cup water
*¼ tsp salt
📍METHOD
1. On wok/pan with medium high/high heat, add 2 tbsp vegetable oil, ginger and garlic, sauté until golden brown/fragrant.
2. Put chicken in wok, stir for 2 minutes until meat turns a light color or is fragrant
3. Then add Cooking wine, dark soy sauce, light soy sauce and oyster sauce. Mix/stir for 2 minutes or until it absorbs the sauce evenly.
4. Now, add rock sugar, water, salt and stir it.
5. Once it’s boiled, lower the heat to medium low. Cover lid and simmer for 20 minutes. After midway (10 minutes), stir it to allow even cooking. Then continue simmering for the remaining 10 minutes with the lid on.
6. After 20 minutes, remove lid and increase heat to medium heat. Simmer for another 5 minutes or until the sauce is reduced a bit or become thicker, it looks and tastes better.
