Chicken Broccoli & Rice Casserole
2 C rice
3 C water
1 lb boneless chicken
2 pkgs frozen broccoli

Place all ingredients in order listed into slow cooker. Cook on high for 3 hours, low for 6.
After cooking time has elapsed, add
1 1/2 C shredded cheese
1/2 C sour cream
Stir until well combined and chicken is shredded.


Green chicken pitas
1 lb boneless chicken
1 large onion, sliced thin
1 TBS oregano
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 TBS oil
1/4 C ACV or lemon juice
1/4 C chicken broth or water

Add all ingredients to crock pot in order listed. Cook on high for 3-4 hours, low for 6. Serve in pitas with Greek dressing (recipe below).


Greek dressing
1/2 cup olive oil
2 TBS lemon juice
1/2 tsp salt
1 tsp garlic powder
2 TBS Italian seasoning
1 tsp sugar
A few drops Worcestershire
Mix all ingredients and whisk until well combined.

Smoked Sausage & Potato Casserole
1-2 lbs Smoked sausage, Conecuh if you can find it 😉, browned if desired
5-6 potatoes, diced
1 onion, diced
1 C water
Add ingredients into slow cooker.

Mix together
1 block cream cheese, softened
1 C shredded cheese

Spread on top of sausage. Add:
1 tsp salt
1 tsp pepper
1 tsp garlic powder

Cook on high for 3 hours, low for 5-6, until potatoes are softened.


Slow Cooker Roasted Chicken & Veggies
1 whole chicken
5 potatoes, cubed
2 cans green beans, one drained
Olive oil
Salt
Italian seasoning

Add chicken to bottom of crock pot. Coat with olive oil. Sprinkle with salt and Italian seasoning.
Add potatoes. Drizzle with oil and sprinkle with salt and Italian seasoning.
Add green beans. Drizzle with oil and sprinkle with salt and Italian seasoning.
Set on High for 4 hours, low for 6-8.
