Fluffy Japanese Souffle Pancakes | Popular Japanese Dessert Recipe

At last, after a few failures, I’m ready to share with you one of the most popular Japanese desserts - fluffy Japanese souffle pancakes recipe! Hope next time I’ll manage to avoid errors and the pancakes will look more perfect! :)

🛒What you need:
eggs - 2 pcs
granulated sugar - 2 tbsp
milk - 2 tbsp
all purpose flour - 3 tbsp
baking powder - ¼ tsp
vanilla sugar - ½ tsp
lemon juice - 1 tsp (optional)
butter - 3 small slices
syrup or sauce - 2-3 tbsp
powdered sugar - 1 tbsp
vegetable oil for brushing the pan

📝How to make:
▪️ Separate egg whites and yolks
▪️ Mix together egg yolks, milk and vanilla sugar
▪️ Add sifted flour and baking powder to the yolks
▪️ Mix well until smooth
▪️ In a separate bowl beat the egg whites with a pinch of salt until foam
▪️ Add lemon juice and sugar, and continue beating until stiff
▪️ In batches fold the egg whites into the egg yolks until well combined
▪️ Do not overmix to keep the batter fluffy and airy!
▪️ Transfer the batter to a piping bag
▪️ Heat and oil the frying pan
▪️ Squeeze the batter on the pan using either mold rings or just DIY paper molds. Actually you can just spoon the batter.
▪️ Add 1 tbsp of water to the pan
▪️ Cover with a lid and cook for about 7 minutes on low heat
▪️ Flip the pancakes, remove the paper, again add 1 tbsp of water, cover the lid and cook for another 5 minutes.
▪️ Put the butter slices on each pancake, pour on your favorite syrup or some berry sauce
▪️ You can also decorate with berries and dust with powdered sugar
