Vegetable Soup
Ingredients:
-1 pound of ground beef or ground chuck
-salt, pepper, onion powder to season the meat
-spoonful of minced garlic
-2 medium carrots peeled and chopped
-2 medium russet potatoes peeled and chopped
-1/2 small head of cabbage chopped
-64oz of V8 tomato juice
-salt, pepper, onion & garlic powder to taste
-1 can of peas drained
-1 can of corn drained
-1 can of green beans drained
Directions :
1. Brown ground beef and season with salt, pepper, onion powder. Drain grease then add minced garlic and cook with the beef for 1-2 minutes.
2. Chop carrots, potatoes, cabbage then add on top of the cooked beef.
3. Add in the tomato juice and season with garlic & onion powder, salt & pepper.
4. Bring to a boil and cook for 30-40 minutes to soften veggies.
5. Add in canned veggies and continue to boil for an additional 30 minutes or until veggies are super tender.
6. Serve with shredded cheese and crushed saltine crackers. Enjoy!
