Chicken meatballs with mashed potatoes
Ingredients:
* onion and carrot for frying
* 1 kg ground meat (I used chicken)
* 3 eggs
* salt, pepper, and spices to taste
* 100 g semolina
* optional: 1 tbsp flour if the mixture is still too runny and the meatballs don’t hold their shape
Instructions:
Fry the onion and carrot first. Spread the fried vegetables on the bottom of a baking dish. Shape the meatballs and place them on top. Sprinkle with your favorite seasonings and pour tomato juice over everything.
Bake in the oven at 180°C for about 40 minutes.
While the meatballs are cooking, make mashed potatoes 🥔
