One-Pot Beef Curry Recipe šš„©
Serves: 6
Prep Time: 15 minutes
Cook Time: 2 hours
Ingredients
For the Curry
1 kg beef chuck or stewing beef, cut into cubes
2 tbsp vegetable oil
2 large onions, finely chopped
4 cloves garlic, minced
1 tbsp ginger, grated
2 tbsp curry powder
1 tsp ground cumin
1 tsp paprika
½ tsp turmeric
2 tbsp tomato paste
400 g canned diced tomatoes
2 cups beef stock
2 medium potatoes, cubed
2 carrots, sliced
2 bay leaves
1 tsp salt (or to taste)
½ tsp black pepper
1 tbsp brown sugar
Optional Garnish
Fresh coriander (cilantro)
Sliced red chili
Steamed rice or naan bread
Instructions
Step 1: Brown the Beef
Heat oil in a large pot over medium-high heat.
Add beef in batches and brown on all sides.
Remove and set aside.
Step 2: Build the Flavor
In the same pot, cook onions for 5ā7 minutes until softened.
Add garlic and ginger; cook for 1 minute.
Stir in curry powder, cumin, paprika, and turmeric.
Cook for 30 seconds until fragrant.
Step 3: Make the Curry
Add tomato paste and stir well.
Pour in diced tomatoes and beef stock.
Return the beef to the pot.
Add bay leaves, salt, pepper, and brown sugar.
Step 4: Simmer
Bring to a gentle boil.
Reduce heat to low, cover, and simmer for 1½ hours.
Stir occasionally.
Step 5: Add Vegetables
Add potatoes and carrots.
Continue cooking for 30ā40 minutes until vegetables are tender and beef is fork-tender.
Step 6: Serve
Remove bay leaves.
Taste and adjust seasoning.
Garnish with fresh coriander and sliced chili.
Serve hot with fluffy rice or warm naan bread.
