Jiro Ono

Jiro Ono is generally regarded by fellow chefs as the greatest sushi chef alive. Owner of the Sukiyabashi Jiro, a 3-Michelin star sushi restaurant in Tokyo, the 90-year-old chef has served many world-famous leaders including Prime Minister Shinzo Abe and former President Barack Obama in 2014.

During his 65 years as a qualified sushi chef, Jiro has created new methods used in contemporary sushi preparation by being an exceptional perfectionist with rigid discipline. Some of these include; massaging octopus for much longer than customary to enhance textures and flavours, boiling prawns just before serving it to the customer – instead of the customary morning boil, and beginning an omakase meal with a mild white fish instead of the traditional tuna.

Eiji Ichimura

Chef Ichimura is a Tokyo-trained chef and has 40 years’ experience making sushi. He operated a top-class sushi bar called Ichimura at the Upper East Side of New York before moving to Brushstroke, NYC, where he is now the master chef at Ichimura.

Focusing primarily on sashimi and nigiri, Ichimura prepares at least four days ahead for the omakase chefs’ tastings. Eiji is also a specialist in shime, a technique for curling, pickling and ageing seafood and fish.

Yoshiharu Kakinuma

Yoshiharu Kakinuma is the executive chef in charge of Sushi Shikon, Hong Kong, a branch of Sushi Yoshitake. He comes from a family of sushi chefs which include his father and grandfather. He served as an apprentice under Mr Yoshitake, a sushi master chef.

After completing his training, he learned English and moved to the US to expand his horizon, working in New York City and Atlanta. After a decade, Yoshitake asked him to take charge of his new branch in Hong Kong in 2012, where Kakinuma has since provided excellent sushi dishes using fresh ingredients flown in daily from Tokyo. He has also helped the Sushi Shikon to achieve a consistent 3-Michelin star rating since 2014.

Mitsuhiro Araki

Chef Araki is arguably the best sushi master in Europe right now. The charismatic Japanese chef at The Araki in London moved to England where he owns the restaurant Araki sushi-ya. He was a 3-Michelin star sushi chef in Tokyo, famous for his amazing skills and knowledge of tuna fish.

He has used his innovative sushi skills to substitute certain Japanese sushi ingredients that are not readily available in Europe, using white alba truffle and black caviar in place of clams and crustaceans.

Masaaki Koyama

Masaaki Koyama is the most famous sushi chef in Tasmania, and one of the best in Australia, living his dream with his popular sushi bar known as Masaaki’s. His bar only opens twice in a week, selling out every time because his sushi is so attractive, rich, and delicious.

Many Tasmanians had never tasted Japanese cuisine until Koyama opened his sushi-ya. He began with tempura, vegetable, and different kinds of westernised sushi, before preparing dishes with raw fish. Many Australians visit from other states to come and taste Koyama’s sushi.
