**Ingredients
Digestive biscuits 60g
Unsalted butter melted 25g
Cream cheese softened 150g
Sugar 45g
Egg room temperature 1pc
Plain yogurt (or sour cream) 90g
Zest of 1/2 lemon (or 1tsp lemon juice)
Vanilla extract 3g
Plain flour(or cake flour) 10g
Optional toppings: strawberry jam, strawberries, blueberries

*This recipe will be enough for 6 muffin-sized mini cheesecakes
*Preheat the oven at 160C/320F bake for 20 minutes, depending on your oven
