Old Fashioned Apple Fritters with a holiday twist - Holiday Cooking

Prep Time -10 minutes; Cook Time - 15 minutes; Total Time - 25 minutes

INGREDIENTS:
2 Medium Apples
1 Cup Oil - for frying
1 Cup All-Purpose Flour
1/2 Cup Milk
2 Tbsp Plain Yogurt - can substitute with buttermilk
2 Tbsp of Granulated White Sugar
1 Egg
1 Tsp of Baking Powder
1/4 Tsp of Baking Soda
Pinch of Salt

--- Chai Spice Sugar ---
3 Tbsp Powdered Sugar
2 Tbsp Brown Sugar
1/2 Tsp each: Ground Ginger Powder, Cinnamon & Ground Cardamom
1/4 Tsp Clove Powder
Pinch each of Nutmeg, Black Pepper & All Spice

Instructions
Chop the apples into tiny bite-size pieces and set aside.
In a large bowl, add all the Chai Spice Sugar ingredients and mix evenly, set aside.
For the batter, in a large bowl combine all the dry ingredients.
In a medium bowl, beat together an egg, milk & buttermilk; then mix in with the dry ingredients and gently fold in the diced apples.
Place a skillet over a medium- medium high heat, and carefully add oil.
Carefully place a spoonful of the mixture into the hot oil, 3 to 4 fritters at a time and cook on each side for approximately 2 to 3 minutes or until golden brown.
Do not rush this part, as you need to ensure that they have time to cook all the way through. If you have some that are wet inside, after opening you can wrap in foil and place in a hot over for about 10-15 minutes to finish cooking.
When fritters are cooked to a golden brown, remove from oil and allow to cool slightly on a dish lined with a paper towel. The paper towel will absorb any excess cooking oil.
Once cool to the touch, coat the fritters with the chai spice mix
