Chewy Sugar Cookie Bars (The Fresh Cooky)
Ingredients:
1 cup real butter (softened)
2 cups sugar
4 eggs
2 tsp vanilla
5 cups all-purpose flour
1 tsp salt
1/2 tsp baking soda
Directions:
1) Preheat oven to 375 degrees and grease 18x13 inch pan.
2) Cream butter for 2-3 min; add sugar and beat until light and fluffy. Add eggs, one at a time, mixing well (about 1 min) and scraping the bowl after each addition. Add vanilla and mix well.
3) In medium bowl, measure out flour, baking soda and salt; whisk together. Slowly add to creamed mixture, mixing on low speed until all the flour is incorporated.
4) Spread dough into prepared pan, making sure it's as even as possible.
5) Bake for 10 minutes, no longer! (they will not look done but you do NOT want to overbake these!); cool completely.
♦️For peppermint frosting, I used 1/2 tsp peppermint extract and 1/2 tsp vanilla extract in a traditional buttercream recipe. For decoration, I crushed peppermint candy canes and added Peppermint Ande's Mints to the top.
🥜Peanut Butter Fudge
Ingredients:
3/4 cup Butter
3 cups Sugar
2/3 cup Evaporated Milk (NOT Sweetened Condensed Milk)
1 cup Peanut Butter
1 jar (7oz) Marshmallow Creme
1 tsp Vanilla
Directions:
Stir together butter, sugar and evaporated milk in saucepan. Bring to a full boil, stirring constantly. Boil 5 min. over medium heat (234 degrees). Remove from heat; add peanut butter, marshmallow creme and vanilla; mix well. Pour into 9x9 inch pan and cool.
🍫Chocolate Chex Delight
Ingredients:
8 cups Chocolate Chex Cereal
3/4 cup packed brown sugar
6T salted butter
3T light corn syrup
1/4 tsp baking soda
1 cup mini marshmallows
1/2 cup caramel bits
1T heavy whipping cream
1/2 cup milk chocolate chips
1/2 cup white chocolate chips
Directions:
1) Measure Chex Mix in large microwavable bowl; line cookie sheet w/ parchment paper or foil.
2) Microwave brown sugar, butter & corn syrup uncovered in 2-cup microwaveable bowl on high 1-2 min, stirring after 1 minute until melted and smooth. Stir in baking soda until dissolved.
3) Pour caramel mixture over cereal, stirring until evenly coated. Microwave on high 3 min, stirring every minute. Spread on cookie sheet. Cool 10 min.
4) Sprinkle marshmallows over mixture. Microwave caramels & cream about 1 min; mix until smooth. Drizzle over mix.
5) Melt white & milk chocolate chips; drizzle over mix.
🌟EASY Snickerdoodle Recipe:
Ingredients:
1-box White Cake Mix
2 eggs
1/4 cup vegetable oil
4T sugar
2 tsp cinnamon
Directions:
Preheat oven to 350 degrees. In a small bowl, combine cinnamon and sugar. Add 1 tablespoon of cinnamon/sugar mixture, cake mix, eggs and vegetable oil in bowl with a spoon until dough forms. Form dough into 1" balls, roll in remaining cinnamon/sugar mixture and place 2" apart on cookie sheet. Bake 6-7 minutes or until cracks begin to form on top of cookie.
Yield: 24-28 cookies
